Tasty Tuesday – Homemade Chicken ‘n Waffles, Oh Yes!

For years, I thought that chicken ‘n waffles was merely an urban legend, concocted through tomfoolery and fantasy. Let me tell you, readers – chicken + waffles = very real, and very delicious. I bought Niko a waffle maker for our anniversary, so naturally I’ve been living off waffles for the past week.

We made waffles every way imaginable. First we made burned waffles, then graduated to fluffy waffles. Our fluffy stacks were topped with bananas and nutella, strawberry jam and butter, syrup and chocolate chips – you name it.

The ultimate waffle creation? Chicken and waffles. While stocking up on treats for our ACC Championship festivities, I purchased a rotisserie chicken and some delicious Smithwicks beer. Turns out, chicken is the perfect topping for a doughy waffle. Everyone at the party went wild for this ridiculous dish. Some choose to step it up a notch by adding chocolate chips to their waffles, but I played it safe with a plain waffle doused in butter, syrup and shredded chicken.

Traditionally, this southern comfort food uses fried chicken, but we substituted with regular chicken and it worked out fine. I’d love to try the original version though. Seriously, this is a must-try for anyone that loves to pig out. It was so simple to make and you can even try this dish with pre-made frozen waffles – but I would highly recommend the real thing.
